Picnic Favourite: Cheddar & Chive Muffins

With the warmer weather and longer days, picnics are back on the agenda.  There's usually a walk involved, so we always find it's best to have a snack inventory that's easy to carry and transports well.  These savoury muffins are simple to make, and go brilliantly with apple, cheese and a flask of tea.  

Cheddar & Chive Muffins

Ingredients

(MAKES 12)

300g Mature cheddar cheese (the stronger the better!)

280g Self raising flour

1 tsp Dijon mustard

½ tsp Cayenne pepper

20g Chopped chives

160ml Olive oil

2 Large eggs

200ml Milk

 

Instructions

Heat the oven to 200 degrees Celsius (180 for fan oven / gas mark 6) and line a muffin tray with paper cases.

Grate the mature cheddar cheese and pop it in the fridge until you use it.

Sieve the flour, baking powder and cayenne pepper into a mixing bowl. Add the chopped chives and cheese to the flour mix and combine gently.

In a separate bowl or jug, whisk together the eggs, mustard, olive oil and milk. Make a well in the middle of the dry ingredients and add the milk mixure.

Combine them gently (don't overmix).

Spoon the mixture equally into your muffin cases, then pop in the oven and bake for 20/25 minutes until they are golden on top.

Leave to cool on a wire rack before packing in your picnic basket and heading outdoors!
